10 chopped Roma tomatoes, unpeeled and cut up
2 full heads garlic, minced
2 hot peppers-minced like habanero or jalapeno
1 cup olive oil

Garlic and peppers can be minced in a food processor. Don't touch your eyes! 
Place all ingredients in a pot over low heat and simmer for about 2 hours, uncovered. 
The longer it cooks, the darker and thicker it will be. However be certain to stir often to prevent burning. Add more olive oil if necessary.
Let cook and serve as a dip
