banana muffins

Compliments of Rich Products Corporation


1 3/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt (or salt substitute)
2/3 cup sugar
1/2 cup Cholesterol-free egg substitute, beaten
1 cup mashed ripe bananas (2-3)
2 tablespoons 100% vegetable oil
1/4 cup Rich’s Coffee Rich® Non-Dairy Creamer


Sift dry ingredients together.

Combine egg substitute, bananas, oil and Coffee Rich® Non-Dairy Creamer. Add to dry ingredients and mix until blended.

Fill lined muffin tins 2/3 full and bake in preheated 350ºF oven for 25 minutes.


Yield: 12 muffins
