Ingredients

1 cup flour
4 cups canned corn
2 eggs
1 cup water
1 teaspoon baking powder
salt and pepper to taste
canola oil for frying
¼ cup sliced green onions

Directions

Mix flour, canned corn, eggs, water, baking powder, salt and pepper together in a bowl. Coat the bottom of a frying pan with oil and heat to high temperature. Drop in a tablespoon of the latke batter. Fry until the bottom is cooked, then flip over and cook until golden brown, adding oil as required. Garnish with green onions.

Approximately 18-24 latkes

Notes

This dish is parve but can also be served with sour cream at a dairy meal.
