Ingredients:
8 carrots, peeled and grated 3 apples, peeled, cored, and grated 1 cup dried cherries 1/2 cup pistachio nuts 1/4 cup grated orange zest 4 eggs, lightly beaten 1 cup matza cake meal 1/2 cup oil 1/4 cup fresh lemon juice 1 teaspoon ground cinnamon 1 teaspoon salt 1/2 teaspoon ground ginger 1/2 teaspoon ground allspice
