A KosherEye family recipe

This is another of our most requested Passover family recipes. . . a side dish, which can be served, warm, cool or at room temperature. My daughter Marcy serves this on many holidays, but this is her delicious Pesach version.

Ingredients: 

2 cans whole-berry cranberry sauce
3 cups coarsely peeled and chopped apples 
2 cups matzoh farfel 
1/2 cup apple sauce 
1 cup brown sugar 
½ cup softened margarine
1/4 teaspoon cinnamon

Directions: 

Preheat oven to 350 degrees. Grease a 9-inch x 13-inch pan, or a 10-inch round baking dish. 

In a bowl, mix apples, cranberry sauce, apple sauce and cinnamon and put into prepared baking pan.

Warm brown sugar and margarine until sugar is melted. Turn off heat and mix in farfel.  Spread farfel mixture evenly over top of cranberry–apple mixture.

Bake for 50 minutes. Serve warm.
