A KosherEye Signature Recipe
Ingredients:
1 lb. penne pasta 1/4 cup extra virgin olive oil 2-4 links Jack’s Kosher Gourmet hot or sweet Italian sausage, sliced 2 tablespoons fresh parsley, chopped 1 whole pepper, roasted (or an 8 ounce jar) 1/2 cup marinara sauce 1/4 tsp. red pepper flakes (optional) Salt to taste
Directions:
Cook pasta according to package instructions. Drain well, reserving 1/2 cup of the cooking liquid.
In a medium skillet, heat olive oil. Saute sausages until cooked and lightly browned, around 3 to 5 minutes. Remove from pan.
Saute peppers and parsley in oil left in pan for about 1 minute. Remove from pan.
Combine marinara sauce and reserved pasta broth in skillet.
Simmer about 3 to 4 minutes. Stir in penne, peppers and sausages. Toss together; add pepper flakes. Season with salt to taste Toss again. Serve hot.
