Silk Road Vegetarian
By Dahlia Abraham-Klein, Tuttle Publishing
Vegan, Vegetarian and Gluten Free Recipes for the Mindful Cook

Review by guest columnist Sarah Hodge

In "Silk Road Vegetarian" Dahlia Abraham-Klein has compiled over 120 vegetarian, vegan, and gluten-free recipes that serve as an exploration and a celebration of the foods from the Silk Road, from elegant jeweled polos / palaus, curries and dal, Persian kookoos and soups/stews, stuffed veggies to shawarma-spiced potatoes, curried veggies, and a wealth of light desserts.

Along the way, you'll read about Dahlia's culinary pilgrimage and her family's roots in Persia, Afghanistan, Bukhara, India and Israel. The book begins with a compact illustrated guide to the spice pantry, tips on basic preparation for tofu, legumes, rice and quinoa, along with handy illustrated cooking instructions to the various types of rice available. She shares an excellent guide to food preservation via freezing, that gives a step-by-step overview of various cooking and storing methods.

You'll find quick and basic staples like hummus, tahini, harissa, za'atar, and chutney; light appetizers including stuffed grape leaves, kookoo (herb frittata), Sephardic leek patties, and an amazing Indian red lentil falafel. There are many fresh salads like orange and fennel, minted beet salad, curried spinach salad with apples and grapes, and roasted veggies. Curries and hearty stews tend to dominate the main dishes, including curried lentil burgers, chickpea and lentil curries and quick and easy veggie sides.

The chapter on desserts offers many lighter (mostly vegan) options, including several rice puddings, parfaits, quick breads, and fruit-based desserts. The instructions are clear, and most of the ingredients should be commonly available at your supermarket.

Silk Road Vegetarian offers many new, quick and healthy recipes. The exotic spices will transport your taste buds. Gorgeous full-color photos illustrate about half of the recipes, and there are step-by-step photos for some of the techniques, making "Silk Road Vegetarian" approachable for any level of cook. Take your tastebuds on a culinary adventure along the Silk Road.

Sarah Hodge, guest columnist, is an Amazon.com Top Reviewer specializing in cookbooks. "I've been vegetarian for over ten years, and am always looking for creative, healthy ways to spice up my cooking. I've taught students from more than 100 countries, including many from Central Asia (Kazakhstan, Kyrgyzstan, Tajikistan, Uzbekistan and Turkmenistan) who were eager to share their languages and cuisines with me. However, there are very few cookbooks that focus on this region, even less so from a vegetarian context, so this is one cuisine that remained relatively unknown to me."

Sara can frequently be found taking cooking and baking classes and cultivating her collection of more than 300 cookbooks. You can read more of Sarah's featured cookbook reviews and cooking adventures at her blog www.bundtlust.com ).

By Rose Levy Beranbaum
Houghton Mifflin Harcourt

Rose Beranbaum Levy is considered the "diva of desserts", "the most meticulous cook who ever lived", and a "legendary baker." Her long-awaited and comprehensive baking book is finally here, and in it she shares all-new recipes for fabulous cakes, pies, tarts, cookies, candies, pastries, breads and more.

Rose was a three-time winner of a James Beard Award and is the author of 10 cookbooks, including The Cake Bible, now in its 50th printing and named one of the top 13 baking books on the James Beard Foundation's "Essential" Book List. WOW!

Her newest masterpiece, The Baking Bible covers the world of baking from recipes for everyday treats to the most elaborate confections. Each recipe is fool proof—with detailed instructions that eliminate guesswork...that is if you follow Rose's mantra, her golden rules. Rose wants to impress upon her readers to use her precise approach.

To ensure consistent results, she reiterates her golden rules, her mantra, throughout the book. She encourages her readers to internalize the rules before beginning the baking process and to follow her fastidious guidelines. She emphasizes the need to formulate good baking habits– such as: reading the entire recipe before starting; utilizing precise measurements; and using the correct, specified ingredients (i.e. bleached flour means bleached flour!). She also shares her tips and tricks on rectifying baking mishaps -- such as a cake that cracks on top or a pie crust that shrinks, etc. She shares brand new baking techniques such as rolling dough out at 60F to keep dough from sticking and how to make the juiciest apple pie ever.  Rose puts baking success within reach of any baker.

In addition to her award-winning and prolific baking repertoire, Rose also has a product line, Rose Levy Bakeware, which includes Rose's Perfect Pie Plate (love this item!) and Rose's Heavenly Cake Strip, both distributed by Harold Imports.

The Baking Bible is an essential addition to any serious or budding home baker's library and a definitive, meticulously researched magnum opus of Rose Levy Beranbaum's illustrious baking career. We think that The Baking Bible, along with Rose's The Cake Bible, should be staples in the home library of every serious baker or budding serious baker.

Be sure to see the Top Ten Foolproof Baking Tips from Rose.

Secret Restaurant Recipes
from the World's Top Kosher Restaurants
By Leah Schapira and Victoria Dwek
Artscroll/Mesorah Publications

Secret_Rest_Recipes_cover

Another "can't put it down" cookbook from the pair we all have grown to love and admire, Leah Schapira and Victoria Dwek. This time, they have taken us behind the scenes in some of the world's best kosher restaurants and shared some techniques, tricks and amazing recipes from internationally acclaimed chefs. Each recipe is recreated for the home cook, and accompanied by a full color photo.

Leah Schapira and Victoria Dwek are co-authors of the popular "Made Easy" cookbook series. Leah is a self-taught cook, and co-founder of Cookkosher.com. Victoria is a busy journalist and managing editor of Whisk published weekly by Ami magazine. They have once again put the "wow" into a cookbook publication. The recipes are globally sourced –New York, Chicago, LA, Boston, Canada, Phoenix, Philadelphia, Mexico, Italy, Panama and Israel. There are 288 pages, 65 restaurants and 80 recipes to devour. Each has been adapted to accommodate and inspire a home cook, accompanied by ingredient and technique explanations, and even pantry product advice. (They have inspired us! We are going to finally relent and buy the pricey but "magical" ingredient- truffle oil.)

As we have shared before, Leah and Victoria, seem to have boundless energy, evident in their creative, contemporary, and diverse cookbooks.

We asked Leah and Victoria: Was it difficult and time consuming to motivate so many chefs to share their recipes?

V: If it were easy, someone would have done this a long time ago! The difficult part wasn't convincing them...for the most part, restaurants are happy to be part of a project like this. The difficult part was getting them to actually sit and write the recipes down. Chefs aren't the type of people who are in front of the computer. Let's just say we were extremely persistent. No one was able to forget about us for too long.

L: I think the American Chinese recipes we received were the hardest to understand, probably because the chefs don't speak English, or their English is hard to understand. So I headed down to the restaurants to watch the chefs prepare those recipes live. I ended up videoing the chefs preparing the dishes and watching it and rewatching it until I got the recipe down pat.

KosherEye is certain that you will want to try many of the recipes in this book, especially because they have been "secret" up until now. We think that you will enjoy the simplicity, yet sophistication of Secret Restaurant Recipes, and your journey through the world of kosher restaurant dining.

Here are two recipes from Secret Restaurant Recipes by Leah Schapira and Victoria Dwek - reprinted with permission from the copyright holders: ArtScroll/Mesorah Publications:

Eggplant Chicken in Garlic Sauce
Segal's Oasis Grill, Owner Daniel Gilkarov, Phoenix, AZ

Rockport Salad

The_Modern_Kosher_Kitchen_cover_300w

It is our great pleasure to come across an exceptional cookbook, but even more of a pleasure when it is written by a friend. We met Ronnie when we entered the journalistic and virtual world of food writing – now almost 10 years ago, and have learned so much from her website and books. She explores the types of foods that we have avoided, out of fear of the unknown, and she makes them unthreatening, familiar and delicious. We have made so many new food discoveries through Ronnie's expertise and inspiration.

Ronnie's love for cooking and entertaining are obvious as we read this book! Her versatile "foodie" background includes cookbook author, journalist, recipe creator, talk show host and a bunch of other food-related callings. Her food roots are deep and started early as she describes her parents as people who literally followed the adage "All who are hungry, let them come and eat".

Ronnie's recipes are fun to make and easy to follow. She envisions what dishes can be for a new generation of cooks. For example, she re-interprets her mom's classic potato salad with crispy cubes of roasted potatoes, and flavors of lemon and rosemary. She reinvents the classic chicken pot pie as a vegetable pot pie - a dish just as satisfying as the original, but minus the chicken.

The Modern Kosher Kitchen is a creative, innovative collection of 125 recipes – a fusion of new foods combined with layers of contemporary flavors. Ronnie provides easy to follow instructions and recipes we never would have attempted without her guidance. Sriracha-infused mayonnaise, crème fraiche, lemongrass, freekeh, and ponzu sauce are just some of the ingredients she shares with her readers. By the way, all of the ingredients she uses are easily found in most supermarkets.

Ronnie has personally selected 3 recipes from The Modern Kosher Kitchen for us to share with you. Do try them! She would love to know when you do and how you enjoy them, and so would we. You can reach Ronnie on her website http://ronniefein.com or on Twitter @ronnievfein

The Modern Kosher Kitchen is quite a delicious, healthful and creative adventure.

Try these recipes from the cookbook:
Panko-Crusted Turkey Cutlets with Cranberry and Pear Chutney
Honey Cashew-Cranberry Pie
Roasted Chicken Breasts with Citrus and Honey

Cookbook Giveaway - Two winners will be randomly chosen.
