Ancient in its origins, Quinoa actually has been a food staple for more than 5,000 years. Quinoa ("Keen-Wa") is a sesame-seed-sized kernel that has been cultivated in the Andes Mountains for thousands of years. The seeds traditionally have a bitter coating. However, once their natural saponin coating is washed off, they are pale yellow and delicate in flavor. For convenience Ancient Harvest Quinoa arrives boxed, fully cleaned and washed prior to packaging and does not need rinsing. According to the Star-K: Quinoa is Kosher L'Pesach and is not related to the five types of chometz grains, millet or rice. However, because there is a possibility that quinoa grows in proximity to chometz grains and is processed in facilities that compromise its Kosher for Passover status, quinoa should only be accepted with a reliable Kosher for Passover supervision. Ancient Harvest Quinoa imported from Bolivia is certified kosher year round by the Star-K, but for use on Passover, Star-K P must be on the label.
