 homemade creamy tomato soup recipe

This bisque can be made in the Instant Pot, or over a slow simmering flame in a heavy duty soup pot. It is a light, lovely bisque, especially tasty when fresh basil is in season.

Ingredients 
1/3 cup extra virgin olive oil 
4 large carrots, peeled and chopped
1 large onion, chopped 
1 Tablespoons dried basil 
3 - 28 oz. whole Italian style tomatoes in puree or 4 lbs. fresh tomatoes, quartered and crushed with a masher
16 ounces vegetable stock
1 teaspoon freshly ground black pepper
2 Tablespoons fresh basil leaves, julienned for garnish 
1 cup heavy whipping cream, or parve whipping cream or soy milk

Directions

Select Sauté on Instant Pot and heat
Add oil and then add carrots, onions and dried basil. Sauté for 4 minutes, or until vegetables start to soften and onions become a bit translucent.
Add  fresh tomatoes or canned tomatoes with puree, and simmer. Add vegetable broth.
Lock on lid and close pressure valve. Cook at high pressure for 8 minutes.
When done, and Instant Pot  beeps, allow a full Natural Pressure Release.
Turn Pressure Cooker off and using an immersion blender. Mix until soup is smooth. Add cream or milk and allow to heat through. Add salt and pepper to taste. 
Garnish with fresh basil

Notes 
This can be made over a simmering flame in a heavy duty soup pot. For a parve version, use a parve milk or creamer
