Adapted from a recipe by Lacey Berry, star of Cooking with Lacey, and Bosch Mixer cooking guru.
This sweet, delicious recipe can be prepared dairy or parve, and is quite a nosh with a cup of coffee or tea. Enjoy!
Ingredients:
1 package instant vanilla pudding (dairy or parve)
2 cups milk (dairy or parve)
1/2 cup Warm Water (105 degrees)
2 Tablespoons yeast
2 Tablespoons sugar
1/2 cup butter or parve margarine, melted
2 large eggs
1 Tablespoon salt
8 -10 cups unbleached all-purpose flour
Filling
2 cups brown or white sugar
2 teaspoons cinnamon
1/2 cup butter or margarine, softened
optional: chopped nuts, dried fruit, apples, or chocolate chips if desired.
Frosting
8 oz soft cream cheese (dairy or parve)
1/2 cups butter or margarine
1 teaspoon vanilla
3 cups powdered sugar
1-3 Tablespoons milk (dairy or parve)
Directions:
In the Bosch Universal Mixer, using the wire whisk, mix pudding and milk according to package.
In another bowl place water, yeast, and sugar and allow to rest 5 minutes.
To the pudding add the eggs, melted margarine or butter and salt.
Mix well then add yeast mixture.
Change to the dough hook and slowly add flour until bowl scrapes clean. (Important: You may not need all the flour, dough should still be soft)
Knead about 3 min on speed one.
Place dough in a bowl. Cover with plastic wrap sprayed with oil. Let rise till double. Shape and fill as desired.
Mix sugar and cinnamon together. Roll dough out to large rectangle and sprinkle generously with sugar mixture. Spread softened butter or margarine on dough. Sprinkle on optional fruit nuts, chocolate chips.
Begin at one end and roll tightly until the whole thing has been rolled up.. Use a sharp knife to cut them into 1 1/2" cinnamon rolls. With filling side up, place on a parchment lined pan or Silpat and let rise until double in size. Bake at 350 for 25-30 minutes or until internal temperature reaches 190-200 degrees.
Frosting: Mix all ingredients until smooth. Brush or spoon onto warm cinnamon rolls. Serve at room temperature – or even better, frost and enjoy straight from the oven!

Yield: Makes approximately 30 rolls
