Our friend Lynne loves to cook and eat, just as we do. She created this quick and creative breakfast recipe and it is a winner.
3 frozen waffles
3 beaten eggs
1/2 cup whole milk
1/2 teaspoon vanilla
1 teaspoon maple syrup
3 Tablespoons butter
Directions
Defrost waffles so they are soft enough to absorb batter (10 seconds in the microwave worked for us)
Whisk eggs, milk, vanilla and maple syrup until combined.
Dip waffles in egg batter and coat well on both sides.
Melt butter in fry pan.
With a spatula carefully add dipped waffles to fry pan. If some batter remains, just pour over waffles. Fry until well browned, flip and do the same on the 2nd side.
Serve with more maple syrup or powdered sugar.
Notes
Optional: Delicious with a topping of blueberries or strawberries as well
