Burrito-Less Beans, Rice and Cheese


A Quick and Easy KosherEye Signature Recipe

Cooked rice, black beans, salsa and cheddar cheese combine to make this Burrito-Less Beans, Rice and Cheese recipe a family favorite. 


1 can black beans, drained and rinsed (such as Eden Foods or Goya)
1-cup salsa (such as Emeril’s or Ortega)
1/2-teaspoon cumin
2 cups cooked rice
1 cup grated cheddar cheese
Optional: 1-cup vegetarian meat crumble – such as Morningstar brand


In a saucepan combine beans, salsa and cumin and warm the mixture.
Sauté crumbles in olive oil; Add to saucepan – mix with spoon until well combined; Top mixture with cheese; allow cheese to melt 
Place warm rice in plates or bowls – spoon mixture over rice – top with additional shredded cheese.  Enjoy! 
Optional: Serve a garnish of sour cream on the side.
To take this up a notch, add jalapeno
 peppers, olives, corn, kale and serve with corn chips
