Royal Apple Cake

The layers of this Royal Apple Cake, with the top layer being a crunchy crumb topping, combine to create a delicious cake that is baked in a large pan, takes about 15 to 20 minutes to prep and serves 10 to 12 people.  Perfect for those occasions when you need to serve a crowd.

Ingredients:

Crust:
2 cups all-purpose flour
1/2 cup margarine, such as Earth Balance Vegan Buttery Sticks, softened
2 egg yolks
1/4 cup sugar
1 1/2 teaspoons baking powder
2 tablespoons kosher brandy

5 - 6 apples, peeled, cored, and diced

Filling:
1/2 cup orange juice
1 egg
2 tablespoons sugar
1 – 2 tablespoons lemon juice
1 tablespoon cornstarch

Topping:
1 1/2 cups all–purpose flour
1/2 cup margarine, such as Earth Balance Vegan Buttery Sticks
1/2 cup sugar

Powdered  sugar, for decoration

Directions:

Preheat oven to 350 degrees.

In a large mixing bowl, using an electric or hand-held mixer, combine crust ingredients. Press evenly into a  greased 9 x 13-inch pan. Arrange apples on dough.

In a small bowl, combine the filling ingrredients. Blend well. Pour over apples.

In another small bowl, mix topping ingredients until a crumbly consistency results. Sprinkle evenly over filling. Bake for 1 hour. Remove and let cool.

Sprinkle with powder sugar before serving.

Notes:

Yield: 10 - 12 servings
