A KosherEye Signature Recipe
Expect applause! Your guests will request the recipe for this trifle-like cake. Make it either dairy or parve – both versions are yummy!
Ingredients:
5 packages ladyfingers, cream filled or not (approximately 60 ladyfingers, Set one package aside)
2/3-cup warm water
4 Tablespoons instant espresso grinds or rich instant coffee grinds
1/2 cup Kahlua, Godiva or any coffee or chocolate liqueur
3 Tablespoons sugar
4 cups dairy whipping cream, or 2 containers vegan, parve Richwhip
1 eight-ounce package dairy cream cheese or vegan tofu cream cheese (such as Tofutti brand)
1 package instant vanilla pudding mix
1/2 cup powdered sugar
1/4 cup grated dark chocolate
Directions:
In a small bowl, combine water, coffee, liqueur and 2 tablespoons of sugar. Set aside.
In a large mixing bowl, beat 4 cups of cream until stiff. Set aside 2 cups to use later. To remaining 2 cups in mixing bowl, add cream cheese, vanilla pudding mix, and confectioner’s sugar. Beat about 5 minutes on medium.
Reserve one package of ladyfingers and set aside.
Working quickly, dip each of the remaining ladyfingers, one by one, into liqueur mixture.
To assemble:
Line the bottom of the glass trifle bowl with enough ladyfingers to cover it. Ladle in 1/3 flavored whipped cream. Continue layering until 4 packages of ladyfingers are used, ending with a layer of ladyfingers. Take final package of ladyfingers and stand up vertically around perimeter of bowl. (DO NOT dip in liqueur mixture)
Ladle reserved 2 cups of whipped cream in center. Refrigerate 3 hours before serving. May be made a day ahead. When serving, garnish with grated dark chocolate.
This can be layered and served in individual parfait glasses or dessert goblets.
