A KosherEye Signature Recipe
We sipped while we baked, and enjoyed both. You will adore this luscious, creamy, parve recipe we made with Walders Vanilla Vodka. It is a KosherEye exclusive, a pleasure to share with our readers
2 cups flour
2 cups sugar
1 pkg instant vanilla pudding mix
2 teaspoons baking powder
3/4 cup orange juice
2/3 cup vegetable oil
1/2 cup Walders Vanilla Vodka liqueur
Walders Vanilla Vodka Glaze:
1 cup confectioners sugar
2 teaspoons Walders Vanilla Vodka liqueur
1-2 teaspoons of water
Optional: 1/2 cup slivered almonds
Make the Cake:
Preheat oven to 350 degrees.
Generously grease a standard 10–inch Bundt pan.
In a large mixing bowl, whisk together flour, sugar, dry pudding mix and baking powder. With an electric mixer on low, add one egg at a time. Continue adding remainder of ingredients, beating about 2 minutes until smooth.
Bake 1 hour. Cool cake about 30 minutes in pan. Remove from pan and place on rack and cool completely.
Make the Glaze:
Combine first four ingredients until consistency of a syrupy glaze and drizzle over cooled cake.
Optional: Sprinkle almonds on top of cake before glaze hardens
Freezes well; best served at room temperature
Yield: Serves about 12
