Ingredients:
Fritter:
2 cups all purpose flour
1/3 cup sugar
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon cinnamon
1 cup milk or parve (dairy-free) almond milk
2 eggs
4 large apples, peeled, cored, chopped
1 quart canola or vegetable oil
Glaze:
1/2 cup confectioner’s sugar
Directions:
Combine flour, sugar, salt, baking powder, cinnamon.
Stir in milk and eggs until just combined. Fold in apples.
Pour oil into skillet so that oil it is approximately 1 1/2–inches deep.
Heat oil to 375 degrees.
Carefully add dough to oil in heaping teaspoons or using a small trigger type ice cream scooper.
Fry until brown, about 2 minutes, then flip once with slotted spatula.
Cook another 1–2 minutes, until both sides are browned. Transfer to paper towels to absorb excess oil. With tongs, dip warm apple fritters into confectioner’s sugar. Best enjoyed while warm.
Notes:
Yield: Makes about 20 small fritters.
