Banana Bread

Adapted from America's Test Kitchen
Simply delicious!


6 bananas (reserve one for topping)
1 ¾ cups flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 stick butter
2 eggs
¾ cup brown sugar
½ cup chopped toasted walnuts


Put 5 bananas in microwave – cover with clear wrap – cook on high for 4-5 minutes
Simmer liquid for about 3-5 minutes until reduced to ¼ cup and syrupy

In a large bowl, whisk together flour, salt and baking soda- set aside
With a mixer, combine butter, vanilla, eggs, brown sugar
Stir wet ingredients into dry, until almost completely combined
Stir in toasted walnuts

Pour into loaf pan
Use 6th banana as topping. Place thinly sliced banana down both sides of top (long way) and sprinkle with 2 teaspoons granulated sugar
Bake at 350 – 1 hour
Let cool slightly and remove from pan
