Our granddaughter Shira, a budding baking expert, developed this scrumptious recipe for Cinnamon Crumb Cake with her good friend Kaila G. Make it parve or dairy. There is one secret ingredient--seltzer!
1 Cup of Sugar
½ cup of oil
1 cup of seltzer
pinch of salt
1 tsp of vanilla extract
2 ½ cups of flour
1 Tbsp + ½ tsp of baking powder
Cinnamon Crumb Topping:
2 ½ cups of all purpose flour
2 cups of sugar
¼ cup of ground cinnamon
1 cup melted butter or margarine
1 Tablespoon of vanilla extract
Soymilk or coconut milk
Preheat the oven to 325 F. In a bowl, beat the eggs and sugar together for 2 minutes. While mixing, add the remaining batter ingredients and mix until batter is smooth. DO NOT OVERMIX.
Pour half of the batter into a round baking pan. Pour on half of the crumb mix. Pour rest of the batter on top- cook for 50 minutes.
After cooled, pour on the icing, then top with the rest of the crumble mix.
Approximately 8 -10 servings
