Lemon Cake from Tea@2 Cookbook



Lemon cake Tea2

This cake is requested more than any other cake at Tea@2. After we tasted it, we understood why.  It is sweet, tart and delicious!


1 package lemon cake mix like Duncan Hines
1 package lemon instant pudding
1/3 cup oil
1 cup water
4 eggs


Preheat oven to 350 degrees
Grease and flour a 10” tube or bundt pan.*
Combine cake mix and pudding. Add oil and water. Add eggs, one at a time beating after each.
Continue beating for two minutes. Pour into pan.
Bake 45-55 minutes, until center springs back when lightly touched.
Cool 25 minutes; remove from pan
1 Cup confectioner’s sugar
2 Tablespoons lemon juice.
Mix and drizzle over cake


* When we made this cake, we used 2 loaf pans. We kept one cake for us, and gifted one. We also tried it with our new King Arthur Flour Bundt pan.  
Just prep the Bundt with brushed on oil and a shake of flour to ensure proper release.
