Melt Away Babka
Adapted from Bais Yaakov Cookbook 2

This babka is “As addictive as it gets. Don’t say you weren’t warned.”
Ingredients:
Batter
4 cups flour
2 cups sugar
¾ cup margarine (1 ½ sticks), softened
2 Tablespoons vanilla sugar
½ cup canola oil
1 cup plain soy milk
4 eggs
4 teaspoons baking powder
1 teaspoon ground cinnamon
pinch of salt
Chocolate Marble:
1 cup cocoa
1/3 cup oil
½ cup boiling water
3 cups confectioners’ sugar
Directions:
Preheat oven to 350 degrees
Grease and flour 3 medium loaf pans or 2 10-inch tube pans*
Batter:
With a mixer or by hand, combine. flour, sugar, margarine, vanilla sugar and oil in a large bowl until mixture forms coarse crumbs. Remove 1½ cups of crumbs and set aside
Chocolate Marble:
Whisk cocoa, oil, boiling water and confectioners’’ sugar in a medium bowl until smooth. Then, divide into 2 separate bowls
Assemble the cake:
Divide batter between prepared pans, filling 2/3 of each pan with batter. Drizzle 1/2 bowl of chocolate marble over batter in each pan. Create marbling by swirling marble in with a knife. Drizzle remainder of chocolate marble over each cake and top each with reserved crumbs. Bake 50-55 minute or until toothpick placed in center comes out clean Remove from oven and cool.
Notes:
We found that the amount of ingredients in this recipe made one 10” bundt pan and one 6” bundt pan, somewhat less than the recipe indicates. We also found that we couldn’t stop eating this delicious cake! Loaf pans can be used.
