On our recent trip to Israel, we shopped at the amazing superstore Osher Ad and flew home with several packages of Lotus Biscoff cookies. (Most Biscoff cookies sold in the U.S. are not kosher certified.) Unfortunately, we did not buy the Speculoos cookie butter which is a necessary ingredient for many of the recipes we were planning. No problem! We found creamy Speculoos Cookie Butter at Walmart for less than $3.00 for a 14 ounce jar. The product is labeled OUD, but according to the OU this is a parve product made on dairy equipment. Enjoy the scrumptious recipe! Delicious parve--or extra delicious when made dairy.
Ingredients
32 ounce container vanilla ice cream, softened
8 ounce container Rich Whip or 8 ounces of dairy whipping cream
1 teaspoon vanilla
1 1/4 cup crushed Biscoff Lotus cookies until fine crumb consistency (divided)
1/2 cup Speculoos Cookie Butter
Prepared graham cracker or cookie pie crust
Directions
Whip cream and vanilla until stiff peaks form. Set aside
With electric mixer or by hand, slowly mix ice cream until creamy and softened. Add Speculoos cookie butter and 1 cup crushed cookie crumbs to ice cream. Mix in with a spatula. Add 2/3 of whipped cream and gently fold in. Spoon into a prepared graham or cookie pie crust.
Top with remainder of whipped cream and additional crumbs.
Freeze for at least 4 hours.
