This is a riff on our classic Easy dump cake recipe- where we combine fruits and cake mix. Fresh peach crisps are our favorite. The consistency of this dish makes it perfect as an ice cream or yogurt topping. Or, just eat it right out of the bowl (we did).
Ingredients
1/3 cup coconut oil, unmelted
1/2 box of yellow cake mix like Duncan Hines
1 lb. fresh or frozen peaches, peeled
1/4 cup sugar
2 teaspoons lemon juice
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons peach or triple sec liqueur (optional)
Directions
Put cake mix into a large bowl and add coconut oil.
With gloved fingers or a pastry cutter, combine until mix is crumbly - similar consistency to a pie crust dough. Set aside.
Mix peaches with sugar, cinnamon, lemon juice, liqueur if using, and vanilla
Add 1 cup of water to Mealthy, and set up removable trivet
In a round ovenproof bowl (we used a Pyrex) that will fully fit into Mealthy, layer about half of the dough mixture, then all of the peach mixture
and then remaining dough mixture. Carefully place this bowl into the Mealthy, on top of the trivet.
You should have water+ trivet+ baking bowl.
Cover Mealthy and set controls to 10 minutes on high pressure and then 10 minute natural release. Serve warm if possible. It can be reheated in a low ove.
Notes
We added some "in season" blueberries as well! This recipe would also be delicious with plums, and maybe some chopped pecans.
Serve it as a topping over ice cream or yogurt. YUMMMMM!
