Éclair Cake

Ingredients:

12 Whole graham crackers
1 Package (4 serving size) vanilla instant pudding mix
1 1/2 cups Rich’s Non-Dairy Coffee Rich
2 Cups Rich’s Non-Dairy Whip Topping thawed
1 Square (1 ounce) semi-sweet chocolate
3/4 cup powdered sugar
1 1/2 tablespoons water
1 tablespoon margarine, softened
1/2 teaspoon vanilla

Directions:

Whip the Non-Dairy Whip Topping until stiff and set aside.

Line the bottom of an 8 x 8 x 2–inch pan with a single layer of graham crackers.

Mix pudding with Coffee Rich and beat for 1 minute. Fold in whipped topping.

Pour half of the pudding mixture over grahams. Add another layer of graham crackers. Pour in remaining pudding mixture and top with another layer of grahams.

Melt chocolate and margarine. Mix with powdered sugar, vanilla and water and blend until smooth. Spread over top layer of grahams.

Cover and refrigerate overnight.
