Scrumptious faux kosher cakes...inspired by a recipe by Ina Garten..
Ingredients
1/2-cup mayonnaise
2 eggs, lightly beaten
1 Tablespoon Old Bay seafood seasoning
1 teaspoon Dijon mustard
1/3 teaspoon Worcestershire sauce
3-4 drops hot sauce, like Frank's or Tabasco
1/3-teaspoon fresh lemon juice
¼ cup finely chopped celery
¼ cup finely chopped red or green bell pepper
1 teaspoon chopped dried parsley or 1/4 cup chopped fresh parsley
2 finely chopped scallions
1 lb. faux crab meat. Defrosted
½ cup buttery crackers or saltine crumbs
2 Tablespoons of melted unsalted butter or olive oil
Directions
Preheat oven to 350 degrees. Line a baking sheet with parchment- lightly grease. Mix all ingredients in a large bowl, ending with crumbs. Combine gently with a large spoon. Form the crab mixture into 6-8 cakes .If possible, refrigerate about 1 hour before cooking (Holds together better). Put cakes on parchment lined baking sheet, brush with melted butter or olive oil. Bake about 25-30 minutes or until golden brown. These can also be prepared in an air fryer.. Serve with spicy mayo, remoulade sauce or cocktail sauce. These are also party friendly when made into mini cakes.
