This is our twist on the classic weekday salmon burger. The ingredients are similar, but the star is canned tuna.Take it up a notch with a lemon aioli.
Ingredients
1 large can (15 oz) tuna, drained well
1/2 cup panko bread crumbs
1 tablespoon dried parsley
2 teaspoons scallions, chopped
2 teaspoons capers
1/3 cup chopped red peppers, chopped
1 teaspoon garlic, minced
½ teaspoon salt
½ teaspoon pepper
1/3 cup mayonnaise
1 large egg, beaten
1 teaspoon lemon juice
1/4 cup olive oil for frying
Directions
In a bowl, combine all ingredients well, except olive oil; Warm olive oil in a fry pan. Form 4 patties and place in pan. Sauté using a low flame until brown; flip gently, and sauté 2nd side. Then cover and simmer for about 4-5 minutes. Optional: Serve lemon aioli on the side.
Optional: Lemon Aioli Topping
1/2 cup mayonnaise
2 drops hot sauce
2 Teaspoons lemon juice
A shake or two of dried dill
