We made this Perfectly Poached Salmon in the Mealthy MultiPot accompanied by a side of honey gold (small Yukon) potatoes and greens.
1 lb. skin-on salmon - we like center cut
1 lb. little honey gold potatoes, cut into small chunks or slices
4 Tablespoons olive oil
1/4 teaspoon lemon pepper
2 cloves garlic, chopped
1/2 red or yellow bell pepper, chopped
2 cups greens like spinach, bok choy, kale
chives or scallions (optional)
Saute peppers, and potatoes in olive oil for a few minutes
Add garlic and sauté for 1 minute more
Let cool a bit and slowly pour in 1 cup water ( or 1/2 cup white wine and 1/2 cup water) Be careful to avoid splatter.
Place trivet over the vegetables, and add salmon in steamer pan and place over trivet.
Cover and cook on high pressure for 2 minutes. Use instant release.
Remove salmon to a plate, cover with foil and set aside
Strain liquid from Mealthy MultiPot. Add greens, potatoes and vegetables back into Mealthy. Add chives if using.
Season with salt, pepper, mix together, and set on sauté until greens are wilted.
Remove, and serve alongside salmon.
Soooo delicious. From one of our eaters " this is the best salmon ever!"
Feel free to season the greens or vegetables "as you like". This salmon would also be scrumptious made with hoisin sauce and served over rice instead of with potatoes. We cooked the salmon for 2 minutes because we like it "rare". If you prefer a more well done salmon, cook for 3 minutes.
