Adapted from a recipe by KosherEye Friend, Mrs. Naghi
Otherwise known as Mrs. Naghi's Mother's Fabulous Persian Fish, Salune from Baghdad reflects the flavors of Mrs. Naghi's Persian heritage. A simple recipe that is delicious and easy to make.
Ingredients:
2 pounds of Whiting fish
2 large tomatoes, sliced into 1/2-inch slices
3 large onions, sliced into 1/4-inch slices
1 8-ounce can tomato sauce
1 tablespoon lemon juice*
3 cloves garlic, minced
Salt and pepper
Paprika
Directions:
Defrost the fish; wash and drain.
Deep fry onion slices until golden. Drain oil.
Spread 1/2 of the fried onions on bottom of large baking dish. Then lay all the fish over onions. Sprinkle with salt, pepper, garlic and paprika. Spread remaining onion on top of fish. Lay tomato slices on top of onions.
Mix tomato sauce with lemon juice, salt, and pepper, and pour over other ingredients in baking dish.
Bake on middle rack at 3000 for 45 minutes.

Yield: 4 - 5 servings
