"Melt in your Mouth" Short Ribs
4 lbs. Beef Short Ribs
2 cups onions, chopped
3 cloves garlic, chopped
6 carrots, cut into chunks
1 1/2 cups beef or vegetable broth
1 Tablespoon Worcestershire sauce
2 Tablespoons olive oil
Kosher salt and freshly ground pepper
Sprinkle ribs with salt and pepper.
Put olive oil into the pressure cooker and add ribs in a single layer into the pressure cooker to brown. This will take 4-5 minutes per side. It may need to be done in batches.. Brown all sides.
Remove browned ribs and set aside. Add garlic and stir constantly to prevent burning for 1 minutes.
Add onions, carrots, thyme and additional salt and pepper to taste and allow them to soften, stirring occasionally. It will also take 4-5 minutes.
Add short ribs back into Instant Pot. Add beef broth. Lock lid on and seal.
Cook ribs on high pressure for 35 minutes. Then release the pressure and let the ribs sit for 5-6 minutes or until pressure is normal. Serve hot over rice or potatoes
