Pastrami Barbecue Stir-Fry

From the author: Who doesn’t like pastrami? Now you can serve it for dinner! Stuff some club rolls with this pastrami stir-fry and vegetable toppings for a sandwich that is out of this world.
Ingredients
1 TBSP. Vegetable or Canola Oil
1 Large Onion, Diced
2 Plum Tomatoes, Diced
6 OZ. Beef Pastrami
¼ Cup good-quality barbecue sauce
For serving(optional)
2 Club Rolls
Shredded Lettuce
Sliced Pickles, Tomatoes, and Red Onions
Directions
In a medium-sized sauté pan, heat the oil and sauté the onion for 2–3 minutes until fragrant.
Add the diced tomatoes and sauté for an additional 5 minutes until soft.
Slice the pastrami into strips and add it to the pan along with the barbecue sauce.
Cover and cook over medium heat for 10 minutes, stirring every 2–3 minutes.
Serve in club rolls with lettuce and sliced vegetables, if desired, or over white rice.
