Corn and Meat Pie

Ingredients:

5 pounds potatoes, cooked and mashed
1 onion, chopped
2 garlic cloves, chopped
1 lb. beef, browned
1 beaten egg
1/2  teaspoon each pepper, cumin (to taste)
2 cans creamed corn

Directions:

Grease a 9 x 13-inch baking dish. Preheat oven to 300 degrees.

Brown meat and set it aside. Sauté onions and garlic; add meat, corn, egg, and seasonings.

Layer as follows:
1/2  of mashed potatoes, meat and corn mixture, then remainder of mashed potatoes.

Bake for about 1 1/2  hours

Notes:

Yield: 8 – 10 servings. Pie serving estimates are variable, based upon appetizers, salads and side dishes served alongside the pie.  Leftovers of this delicious pie are wonderful, so don't hesitate to make extra.

Optional:
When almost done, top with a layer of Daiya OU kosher parve cheddar “cheese”.
