We have been making this yummy Passover treat since 1993! We have also used this recipe during the year and substituted graham crackers for the matzoh. This recipe is a winner!
Ingredients:
4 - 6 unsalted matzohs
2 sticks margarine (1 cup)
1 cup firmly packed light brown sugar
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
1 cup chopped pecans, optional
Directions:
Preheat oven to 350 degrees.
Line a large rimmed baking sheet (11" x 17") completely with heavy duty aluminum foil. Spray with cooking spray.
Cover the pan with a single layer of matzoh. If there are spaces, fill them with pieces of matzoh. Set aside.
In a heavy saucepan, melt the margarine and brown sugar*, stirring, and bring to a boil. Continue stirring and boil for three minutes. Remove from heat and stir in vanilla. Pour mixture over matzoh and bake 15 minutes.
Remove from oven and immediately sprinkle chocolate chips over top of matzohs. Be careful as it is very hot. Chocolate will melt; smooth evenly over top of matzohs. May need to return to oven for a few minutes. Sprinkle nuts over melted chocolate.
Refrigerate for one hour. Peel away foil and break into pieces. Store in airtight container.
Notes:
*Some people also add a pinch of kosher salt; it brings out the flavor of the chocolate.
