Debbie's Passover Macaroon Fudge Bars

This is basically a brownie recipe that is packed full of macaroon flavor. We always have extra store-bought macaroons and this recipe makes excellent use of them. The brownies are sweet, chewy, dense and delicious! This is an easy recipe that will not taste like a Passover dessert.

Ingredients:

6 ounces semisweet chocolate chips
1 cup unsweetened butter or margarine
1 1/2 cups firmly packed brown sugar
1 tablespoon vanilla sugar
3 eggs
3/4 cup matzo cake meal
1/4 cup potato starch
1 1/2 cups lightly packed, quartered or coarsely chopped, macaroons, any flavor*

Directions:

Preheat oven to 350 degrees. Lightly grease a 9-inch square baking pan.

Melt chocolate and butter/margarine over low heat.  Cool to room temperature. Stir in brown sugar, vanilla sugar, eggs, cake meal and potato starch. Stir in macaroon pieces.

Spoon batter into prepared pan. Bake 40 minutes or until top seems set. Do not overbake. Bars should be set and not seem dry to the touch, but there should not be a dry crust around sides.

Makes 24 bars.

Notes:

*We use a combination of vanilla and chocolate macaroons but coconut is also excellent.
