Passover Brownies

These brownies use matzo flour instead of regular flour to make them kosher for Passover. But you'd never guess it! They're rich and chocolaty, just as a brownie should be.

Ingredients

¾ cup matzo flour
1-cup sugar
1 Tbs. vanilla sugar
5 oz. bittersweet chocolate
2½ oz. butter
2 eggs
¼ cup brandy (substitute a liqueur such as Sabra or vanilla extract if kosher for Passover brandy unavailable)
¼-½ cup roughly chopped walnuts
¼-½ cup chocolate chips (optional)

Directions

Preheat oven to 170°C/340°F.
Mix together the matzo flour, sugar and vanilla sugar. Set aside.
Melt the chocolate and butter together over low heat until smooth.
Mix the melted chocolate into the flour mixture. Add the eggs, brandy, walnuts and chocolate chips, if using, and stir to incorporate.
Pour into a greased 20x30-cm. baking pan and bake for about 25 minutes, until a toothpick inserted in the center comes out dry.

Serves 8 to 12
