This is the perfect Passover comfort food for mac and cheese lovers. Our panel of tasters gave it a two thumbs up!
Adapted from a family recipe shared by our friend Susan Londe
3 ½ cups matzo farfel or broken up matzo
1/2 lb. cheddar cheese, shredded or cut into small pieces
1 cup milk
1 teaspoon salt
¼ teaspoon pepper
2 cups sour cream
1 stick butter, cut into about 16 pieces
Preheat oven to 350 degrees. Spray 9 x 13 dish with oil or spread with butter- set aside
In a bowl, beat 2 eggs and pour over farfel
Whisk milk, salt, pepper and 1 egg and pour over farfel mixture
In a greased baking dish layer half of farfel mixture. Spread the cheese, sour cream, and cut up butter over top.
Repeat the identical layersa second time.
Pour milk mixture over all. Dot with additional butter.
Cover dish with foil and bake 30 minutes
Remove foil and bake 15 minutes more, or until brown
Serves about 12
