One sheet pan- one easy to make healthy, delicious veggie!
1/4 cup olive oil
2 Tablespoons olive oil
2 Tablespoons apple cider vinegar or white wine vinegar
1 Tablespoon minced garlic
3 sprigs fresh thyme, minced
1 sprig fresh rosemary, minced
5 pounds carrots, peeled and sliced into 2"-3" pieces, left whole with ends trimmed; or sliced down the middle
Toss carrots with oil and spices. Preheat oven to 400 degrees. Spread onto two sheet pans. Oven "fry" for about 20 minutes, tossing them occasionally, until the carrots are tender and brown along the edges. Place the carrots into a dish or platter. Season with salt and pepper to taste.
Serve at room temperature or reheat until warm. Garnish with parsley or dill
