2 eggs, separated
2 Tablespoons Matzo
1 Tablespoon seltzer or water
4 Tablespoons oil
Optional: sugar and cinnamon for sprinkling, marmalade on side
Whip egg whites until stiff but not dry
Whisk yolks with salt, seltzer and matzo meal
Fold egg whites into yolk mixture
Warm oil in fry pan- add egg batter- fry until bottom seems firm
Flip over with a spatula or chef "maneuver"
Optional:Sprinkle with sugar and/or cinnamon.. Serve with strawberry or orange marmalade on side
