Orange juice, chicken broth and honey are blended together to create a sweet sauce for this chicken dish. A perfect dish to serve for Rosh Hashanah or any festive occasion.
Ingredients:
1 (3-4 lb.) chicken, cut into pieces
1 tablespoon fresh grated orange rind
1 teaspoon salt
1/4 teaspoon pepper
2-3 eggs, beaten
2 cups bread crumbs
1 cup orange juice
1/2 cup chicken broth (reduced sodium)
1/4 cup parve margarine, melted
1/2 cup honey
Chopped fresh parsley, optional
Orange slices, optional
Directions:
Preheat oven to 350 degrees.
Combine bread crumbs, orange rind, salt, and pepper. Dip chicken pieces in eggs and then roll in crumb mixture. Arrange chicken pieces in greased shallow baking dish. Cover and bake for 15 minutes.
Combine orange juice, chicken broth, melted parve margarine and honey; pour mixture over chicken and bake, uncovered, 45 minutes or until done, basting occasionally.
Sprinkle with chopped parsley before serving. Decorate the dish with the orange slices.
