This recipe is a family favorite, especially when we don't want the mess of deep frying. As most of you know, we are from Atlanta, home of authentic southern fried chicken. We think that this recipe is almost as good as the real thing.
Ingredients
1 cup flour
3 teaspoons grated lemon zest
1 teaspoon paprika
1/4 teaspoons salt
5 tablespoons fresh lemon juice
¼ cup water
½ cup olive oil
1 cut up 8 piece chicken
Directions
Preheat oven to 375F. Coat a baking pan with ¼ cup olive oil
In a shallow bowl, combine flour, lemon zest, paprika, and salt.
In another shallow bowl, mix lemon juice and water.
Dip chicken in liquid mixture, then in flour mixture and lay in the baking pan. Drizzle chicken with oil.
Bake 20 minutes; turn chicken carefully and bake 15-30 more minutes or until chicken is cooked through (no longer pink inside).
If not serving immediately, simply re-warm in oven or on a blech – uncovered to maintain crisp.
