The sugars in the Coke caramelize the chicken and onions in this dish so that they become dark, sweet, and delicious.
2 medium onions, halved and sliced
8 chicken quarters (see Cook's Tip, below)
1 teaspoon salt
¼ teaspoon black pepper
1 Tablespoon garlic powder
1 cup Coke
1 cup barbecue sauce
1 cup raspberry jam
Preheat oven to 400°F.
Place sliced onions into a large pan. Place chicken over onions; season with salt, pepper, and garlic powder.
Prepare the sauce: In a medium bowl, combine Coke, barbecue sauce, and raspberry jam. Pour sauce over chicken.
Bake, uncovered, for 1 hour 15 minutes, basting after 40 minutes, until golden brown.
Use your family’s favorite chicken parts.
Do not use Diet Coke, as the sugars in regular Coke are needed to caramelize the chicken.
Prepare through Step 3; freeze before baking and bake it fresh after it has defrosted. meat – yields 8 servings – freezer friendly
