A classic, simple and delicious way to prepare chicken. This is a beloved and popular recipe!
2 chickens, cut into eighths
Rub: 1 teaspoon each minced garlic and black pepper
1 jar sweet and sour sauce such as Gold's or Joyce Chen's
1 can of peach slices, drained
Preheat oven to 350 degrees.
Rub chicken with spice rub. If time permits, marinate in refrigerator for a few hours or overnight. Place chicken pieces in a roasting pan; Bake covered at 350 degrees for 45 minutes.
Uncover, pour on sauce, and continue baking another 30 minutes– basting occasionally until golden brown.
Remove from oven, place fruit on top. Bake 5 more minutes. Serve alongside warm rice or rice pilaf.
Notes: For an Asian twist - add 2 teapoons of soy or tamari to sauce, along with a 1/2 teapoon of grated ginger.
