Applesauce Cake

1/2 cup margarine (I use Earth Balance) or butter
1 cup sugar
3/4 cup brown sugar
2 large eggs
2-1/2 cups all-purpose flour, sifted
1-1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon grated lemon peel
1-1/2 cups applesauce
2/3 cup raisins


Preheat the oven to 350 degrees. Grease a 13"x9" baking pan. In the bowl of an electric mixer set at medium speed, cream the margarine, sugar and brown sugar for 2-3 minutes or until smooth. Add the eggs one at a time, beating after each addition. Mix the flour with the baking soda, salt, cinnamon, nutmeg and lemon peel. Add the dry ingredients to the egg mixture alternating with the applesauce. Fold in the raisins. Pour
the batter into the pan. Bake for about 45 minutes or until a cake tester inserted into the center comes out clean. Let cool on a rack for 10 minutes then invert the cake onto the rack to cool completely. Makes 12 servings
