Excellent addition to poultry and meat recipes, salad dressings and spirited beverages. We also love it as a glaze for salmon, and a topping for ice cream. The syrup is both sweet and pungent, and a staple in the KosherEye recipe collection.
4 cups pomegranate juice like Pom Wonderful
2/3 cup sugar
1 Tablespoon fresh lemon juice
Combine ingredients in a pot. Stir until sugar dissolves, then simmer on low, uncovered for about 50 minutes, until reduced by about 1/2. Refrigerate for a few hours. It will thicken even more when cooled.
Recipe: Kosher, parve - Makes about 2 cups pomegranate syrup, and will be usable for months if kept covered and refrigerated.
