Masha Hershkovitz is sharing Fuego Mundo's recipe for homemade Jalapeño Potato Latkes. These have a 'kick" and are sure to please. They are healthy, delicious & unique – definitely Fuego Mundo!
Ingredients:
10 medium potatoes
3 large onions – chopped
1 large onion – chopped
1/2 cup green Jalapeños – chopped
1 1/2 cups whole wheat flour
8 lightly beaten eggs
Salt & pepper to taste
Oil for frying
Directions:
Grate the potatoes and place in a towel to dry.
In a frying pan, place a little oil and sauté the 3 large onions until golden and caramelized.
Mix all ingredients, shape and fry potato lakes on medium-high heat. Maintain the high heat of the oil when frying the latkes.

Notes:
KosherEye: Judging from the amount of the ingredients, this recipe makes a lot of latkes. For a smaller batch, make half of the recipe.
