Lemon Herb Couscous

A quick and easy side dish that is delicious – couscous flavored with lemon, fresh herbs and toasted pine nuts. It will become a favorite.

Ingredients:

2 1/2 cups chicken or vegetable stock
1/2  tsp. salt
1 Tbsp. olive oil
2 1/2 cups fine couscous
3 Tbsp. lemon juice
2 tsp. lemon zest
1/4 cup  flat leaf parsley -- finely chopped
1/4  cup  chives -- finely chopped
1/2  cup  pine nuts -- toasted

Directions:

Bring the stock, salt and olive oil to a boil over high heat.  Remove from heat and add the couscous and stir through.  Cover and set aside for 7-8 minutes, until all of the broth is absorbed and the couscous is tender.

Use a fork to fluff the couscous up. Add the lemon juice, zest, parsley, chives and pine nuts and mix in with the fork.  Taste and check for seasoning, adding more salt if necessary.
