Cool weather seasons are the perfect time to think acorn squash. However, preparation of winter squash can be challenging due to the difficulty in slicing them. However, we have a no-fail shortcut to make slicing any winter squash easy and quick.
Ingredients
3 small unpeeled acorn squash-approximately 3 lbs.
1/4 cup olive oil
3 Tablespoons brown sugar
1/2 teaspoon each salt and pepper
3 Tablespoons maple syrup
Directions
Preheat oven to 400 degrees
Shortcut, safety alert! Pierce the skin with a fork or knife in about 10 places. Place unpeeled squash in a microwave and heat on high for 2-3 minutes.
Let stand for another few minutes before slicing. If using 3 small squashes, process each separately.
Cut each squash in half. Remove seeds and strings with a spoon or knife. Then slice into " crescent" strips. Put all of the squash into a plastic bag or large bowl and add all ingredients. Be certain that all squash is covered with seasoning mixture. Place into 2 parchment or foil covered sheet pans in single layers and roast about 30 minutes or until softened. The peel on acorn squash is edible and delicious. Garnish with thyme or sage if desired. Serve warm
Notes: Optional additions include chopped pecans, sunflower seeds and cayenne pepper.
