Broccoli Noodle Kugel

Adapted from Class Cooks, Hebrew Academy P.T.A, Atlanta,GA

Ingredients:

8 ounces fine noodles
10 ounces frozen chopped broccoli, thawed and drained
1 stick (1/2 cup) margarine, melted
1 cup milk substitute such as soy milk, Coffee Rich, MimicCreme
3 eggs, beaten
1 package onion soup mix (or less, according to taste)

Directions:

Preheat oven to 375 degrees.

Cook noodles as directed on package and drain. Mix together melted margarine, milk substitute, beaten eggs and onion soup mix. Add the noodles and drained broccoli.

Bake in a 2 quart casserole for 40 minutes.
