Quick Kosher Faux "Crab" Soup

Inspired by a Paula Deen recipe

This soup is truly delicious, and  quick to prepare. Your guests will request the recipe, and be surprised when they discover how easy it is.

Ingredients:

2 tablespoons butter
1 small onion, chopped
1 (10 3/4‑ounce) can condensed cream of potato soup*
1 (10 3/4‑ounce) can condensed cream of celery soup*
2 soup cans milk, or half–and–half or mixture of both
1 can corn, drained and rinsed
1 pound kosher mock "crabmeat", small pieces or shredded
1/4 cup dry sherry
Freshly ground black pepper

Directions:

In a large saucepan, melt the butter and sauté the onion until translucent, 3 to 4 minutes. Add the soups, milk, and half‑and‑half. Add the faux "crabmeat" and bring just to a boil. Add the sherry and pepper, to taste. Add salt if necessary. Serve immediately. Or allow to cool to room temperature, then refrigerate or freeze immediately in plastic microwavable reusable containers with lids.

Notes:

Yield: 4 to 6 servings

*we suggest using Walmart Great Value Brand soup; it is OU kosher, dairy
