Ingredients
2 cups onion, chopped
1-cup celery, chopped
1-cup carrots, chopped
½ cup green bell pepper, diced
½ cup fresh green beans, chopped
2 cloves garlic, minced
2 T olive oil
½ teaspoon dried thyme
1 sun dried tomato, shopped
1 bay leaf
¾ teaspoon ground black pepper
Sea salt to taste
Directions
Sort; rinse Great Lakes Blend split peas. Drain
Place water, and spices into a 6-quart stockpot, simmers 10 minutes
Add split peas. Cover and bring to boil; reduce heat to medium low and simmer for 20 minutes
Place vegetables and spices into soup
Cover and simmer 20 minutes longer.
Adjust seasoning to taste.
Notes
If you wish to make this smoky and include meat, we suggest either a smoked turkey leg, some cut up hot dogs or a few pieces of Jacks Gourmet kosher sausage. For vegetarians, wishing to add a bit of smoky flavor, try TaftFoodmaster's Seitan Sausage.
