smashed potatoes

Ingredients

 2 lbs. small to medium Yukon Gold potatoes, unpeeled
1/3 cup olive oil
2 Tablespoons parve butter substitute - like Earth Balance
1 teaspoon sea salt
1 teaspoon garlic powder
1/2 teaspoon coarse pepper
1 teaspoon onion powder
Salt for boiling potatoes

Directions

 Preheat oven to 350 degrees
In a large pot, boil potatoes in salted water until they can be pierced with a fork
Turn off flame; remove potatoes from pot, and drain
Return potatoes to pot; cover pot with towel and allow to totally dry, about 5 minutes
Place potatoes in a single layer on a sheet pan
Smash each potato halfway through with a fork
Melt margarine and oil in microwave
Spoon oil mixture over potatoes and then sprinkle seasonings over potatoes*
Roast for about 30 minutes in oven, uncovered until browned and fully roasted. Enjoy!

Notes

Feel free to use any seasonings your family enjoys! Rosemary, parsley, dill or additional garlic work well in this dish or as garnishes when serving.
Serves about 8 - 10 as a side dish
