This cheesecake made its appearance recently, while I was baking and I ran out of cream cheese in the middle of mixing up all of the ingredients.Yes, this is one pricey cheesecake with the goat cheese addition, but well worth the fluffy delectable result. The smiles on the kids faces proved it!
Ingredients:
1 1/2 cups graham cracker crumbs
3 tablespoons sugar
1/3 cup melted butter ( can substitute Earth Balance)
16-ounces cream cheese
16-ounces plain goat cheese
1 cup sugar
1 teaspoon vanilla extract
4 eggs
1 can cherry pie filling
Directions:
Heat oven to 325 degrees
Mix graham crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
Beat cream cheese, goat cheese, sugar, and vanilla, with mixer until well blended. Add eggs, 1 at a time, mixing on low. Pour into crust.
Bake approx 55 minutes or until center is set. Pour cherry pie filling over the top. Refrigerate at least 4 hours.
